For the love of the Avo

If there's one thing that my friends, family and boyfriend know it's that I love avocados. If you check my Instagram account (ooh there's a cheeky little plug for ya) you'll see that right beside my name is the avocado emoji (I was over the moon when Apple added it to the collection). It's just so darn tasty!

I love sharing bits of my day through my Instagram stories. It makes interacting with my friends and followers so much easier and quicker. I love sharing recipes and trying new dishes on there as well. Whenever I make one of my go-to comfort food dishes or healthier treats, I get tons of questions (yes, I actually do, promise lol) about what ingredients I use or how I make it. One of the most requested dishes is how I incorporate avocado in my shakes and on toast. I always have a giggle because it's honestly so easy to make and I didn't think mine would be any different from ones you find online. But, I've decided, since I'm getting back into the swing of things (aka blogging more) I thought I'd share with you guys how I make my Avocado on Toast. It's super simple, super quick and absolutely delicious!

Let me first start by saying I don't buy avocados as often as I would like to. To be quite frank, they're ridiculously expensive here in Manila. Sometimes one piece can go for P90 pesos and honestly #AintNobodyGotTimeForThat. The only time I had a ton of avocados was when Nico and I went up to Tagaytay and were able to buy a huge sack for P500 bucks and I swear it was the best day of my life. I could've set up my own little Avocado stand outside my house and made a profit (but instead I just ate them all lol) So when I feel like treating myself or just eating a bit healthier for that week, I'll go to the grocery and buy 2-3 avocados. With that being said, let's get on with the recipes!

The Baesic Avo Toast


1 Whole Wheat Bagel
1/2 Mashed Avocado
1 Calamansi
Sprinkle of 'Slap Ya Mama' Seasoning (you can use salt and pepper)

See what I did there? Sometimes I just want to slap myself cause I'm so annoying pun-ny Haha! But seriously, this is usually what I'll have whenever I have a couple of avocados lying around. All you need is some bread- I personally love the whole wheat bagels from French Baker cause they're cheap, they're huge and they're super filling! I cut it in half and toast it while I mix up the avocado topping. I use half an avocado (sometimes one whole if I'm super hungry or it's a small avocado), mashed up in a bowl. I mix in the juice of one Calamansi and I spread it all over the bagel. I then sprinkle some Slap Ya Mama Seasoning. My sister Trina brought this back from her trip to New Orleans and OMG it is life changing! It's basically Cajun seasoning that makes everything taste sooo much better! But don't worry because if you can't find it, salt, pepper and chili flakes work just as good!


Salmon, Eggs and Avocado on Toast



Smoked Salmon
Kale
Arugula
1 Calamansi
2 Eggs (scrambled)
Whole Wheat Toast
Salt, Pepper and Chili Flakes

Yum. Yum. YUMMMM! Just staring at these photos is already making my mouth water! Here's a little "beefed up" version of the classic avo-toast. I recently discovered that Rustans has a huge selection of smoked Salmon. From super expensive ones (P500-P600 for 100 grams) to more affordable options, you can really have your pick of what kind of smoked salmon you want. I was able to find some for just P185 for 100 grams and it was definitely a good deal!

My sister Trina brought back some organic Kale and rugula from Antonio's in Tagaytay so I decided to add it to my toast. All I did was use the same basic recipe on top, and add some greens, scrambled eggs and the smoked salmon on top. This is so much more filling than the basic recipe but the kind of dish that you know will fuel you for the entire day. It's super tasty and I did end up adding some Slap Ya Mama cause I'm so addicted!

*How to make scrambled eggs: crack 2 eggs in a bowl and add a table spoon of water (you can use milk if you prefer) whisk until bubbly and light. Pour into a non-stick pan on low heat and mix constantly until eggs are cooked
